I am inclined to just burn without the catalytic converter since this is for the shop so it only runs on the weekends. Am I going to loose much efficiency without it?

I handle poplar every year and have noticed that it rots pretty quickly compared to pine and other woods. If I were going to spend the time milling and handling he boards I'd pick something else if it was available. If you have to go with it make sure it is sealed against the weather well.

You'd be surprised at how well they work, the dark color draws heat from the sunlight and absolutely destroys the ice. I have never seen things go bad from the ashes getting wet.
