Milling beams 6x6, 8x8

To elaborate more, say I have white oak log. The biggest square profile beam i can cut from it should fit inside the sap wood.

Or is it better to cut in two halfs or four quarters and make the pitch to be one of the edges?
 
They will be the most stable when you center the pith in both ends of the beam.

Second will be, to make sure you have NO pith in a beam at all...

Some woods are more forgiving than others though...

I milled out some 8x8's yesterday,
