Pruning fig trees

I've got 4 decent size (~10' tall) fig trees at my house. What's the correct way to prune them & at what time of year?
 
Are these fruiting figs? Or some ornamental species? The fruiting species don't need much work usually other than removing crossers, training growth in desirable directions & removing suckers. Prune when dormant in winter. Ornamentals you prune like any other broadleaf evergreen.
