Pruning fig trees

I've got 4 decent size (~10' tall) fig trees at my house. What's the correct way to prune them & at what time of year?

Put stuff down on the floor. They bleed white gunk.

Are these fruiting figs? Or some ornamental species? The fruiting species don't need much work usually other than removing crossers, training growth in desirable directions & removing suckers. Prune when dormant in winter. Ornamentals you prune like any other broadleaf evergreen.

If they are fruit that you want, keep them reduced so you can get the fruit,
So just prune them back in the winter,
