If your were to flat saw a green Southern Yellow Pine log into say, boards that were exactly 2"x8", what would you expect them to shrink to after air drying to about 20% ?

Or, to put it another way, what size would you saw to get a rough lumber board that measured 1.5"x7.5" after air drying ?

Depends on how ruff the saw cut is but I think 2"x8" should be fine. Be sure they are stacked and stickered flat and on a flat surface. A friend stacks his lumber in a field on ruff terrain to air dry and he gets a lot of warping.
 
If it is good quality logs to start with and is handled correctly thru out the process 1 5/8 x 7 ¾ with a smooth cut from a band saw should do nicely.
