I don't ever use a recipe but i'll give you my batter tips.

Eggs make it cakier/fluffy
Use more seasoning than you think is prudent.
Toss wet meat in dry flour/cornmeal then into batter then dry again. Use one hand in the dry and the other for the wet.
Don't use water to thin. Use beer or buttermilk.
 
I dredge the meat in corn starch then into a wash of Egg and a little milk. I then dredge in flour seasoned with salt & pepper. To keep the breading from coming off during cooking, I let the coated meat sit on a baking rack for about 15 minutes. This makes for a crispier crust as well.
 
Season meat first, coat with flour, then egg, then bread crumbs. Remember to season first. Deep fry.
easy to use on most anything, really good for pickles. Try rolling day old mac n cheese up in small balls and doing the same process. Mashed potatoes too.
