I spent many years pruning large oaks. Unless they were extremely thick, I mostly addressed deadwood and crossed/rubbing/damaged limbs. This is usually not a homeowner-type job, unless you have lots of training and experience with climbing and pruning techniques. Get some bids from reputable tree companies in your area. Preferably with Certified Arborist climbers (lots of companies have a Certified Arborist in management, but the guy who climbs the tree with a chainsaw is most important). Also remember that cutting more out of the tree isn't always better. Proper pruning involves knowing WHAT to cut, not just whacking off enough limbs to 'give the customer their money's worth'.
I wish I could go into greater detail, but it is kinda hard to put 12 years experience into 1 or 2 paragraphs.
