    Setting it on the counter to get it to room temp is not the way to Start a steak. Microbe heaven. And after 2 hours the center may be only 50-60 degrees. So there will be a pink center. To get the center to 120 th outside will be too done

    Preheat and sear makes it easy. And safe.

    Especially important with Wagyu beef. The outside carmalizes so quickly. But worth it.

    I got pot roast and Chicken Heart Corn Mushroon Barley soup.....thick enough to stand a knife up in when cooled.....vinegar optional.

    ......Never had wagyu and the pic is a random innernent picture I liked. A good fillet is nice but a nice, bone-in ribeye is my favorite steak to eat.

    Boneless ribeye. Thick cut every Monday night for my 96 year old mom. She gets the tender rim. I take the rest.

    I get Wagyu when marked down.
