Our newly planted Autumn Blaze maple tree has been attacked by mice/vols and have chewed the bark off around the base of the tree. I guess the build up of snow around the tree created a safe haven for the critters. Are there any first aid treatments for the tree so as to give it a fighting chance in the Spring?

I don't think there is anything you can do. It sometimes kills a sapling or stunts it's growth and it recovers - but is set back a number of years. If it's an important tree to your landscape, you should plan on replacing it - maybe in the fall so you can assess how it's doing over the summer + that's the best time to plant. Protect the tree over the winter - a circle of hardware cloth 1 inch under the soil.
