I noticed a stack had tipped over next to the shed this morning. I also noticed that there is a lot of spots on it. I know the drying location (north side of shed) isn't ideal, but I had several cords of ash stacked there for 2 years and it never molded.

Does elm mold more easily than other woods? Assuming that it is, in fact, mold or mildew.

Yep, Elm will mold if it's stored where air can't circulate around and through it.

I cut standing dead Elm all winter and tossed it directly in the basement, the lower part of the trunk would thaw out and be quite wet so I'd set it by the stove to dry for a few days. Every once-in-a-while I'd come across a piece that that had been in the stack (in an old coal room, against the basemen wall) for a couple weeks or more... some of it looked like it was growing hair 'cause of all the mold and mildew.

I was a bit worried about mold spores circulating through the house so I took to separating the main trunk(s) from the rest; stacked it out close to the stove where it would dry out in about a week to 10-days.

I've seen Oak turn to a crumbling mess of dust after being stacked against the wall, on the north side of a building and under a heavy tree canopy in just two years. I think a lot would depend on your climate and building location (such as if any wind that could get to the wood is blocked by trees or another building).

Personally, I'd be moving that stack.

One of the best places too find morel mushrooms in kansas is by dead elms so maybe there is a connection there!!

There's no place to move it to, so it's just gonna have to work itself out :D I have it stacked only two rows on the pallets so there's still a fair bit of sun and wind from any direction other than the south should circulate a fair bit.
Even the stuff that was laying out in the field was in the same condition after being cut in Dec. ah well!

I have burned a lot of elm, but it does smell bad and cure slowly. Like the poem says,

B

eechwood fires are bright and clear
If the logs are kept a year,
Chestnut's only good they say,
If for logs 'tis laid away.
Make a fire of Elder tree,
Death within your house will be;
But ash new or ash old,
Is fit for a queen with crown of gold.

Birch and fir logs burn too fast
Blaze up bright and do not last,
it is by the Irish said
Hawthorn bakes the sweetest bread.
Elm wood burns like churchyard mould,
E'en the very flames are cold
But Ash green or Ash brown
Is fit for a queen with golden crown.

Poplar gives a bitter smoke,
Fills your eyes and makes you choke,
Apple wood will scent your room
Pear wood smells like flowers in bloom
Oaken logs, if dry and old
keep away the winter's cold
But Ash wet or Ash dry
a king shall warm his slippers by.
