What size bar would be recommended on a Stihl 041? It has a 16" on it now.

It really depends on the size of wood you're cutting.
The oilers on these saws can handle some long bars when they're turned up, I've ran up to a 24" with my Super and had no problems. I find they balance nice with a 20".
