I thought that I read somewhere that running the grinder with only 4 sets of pockets makes it grind faster? I tried to Google it and couldn't find anything. Also my grinder has yellow jacket teeth. Any help or opinions would be appreciated
 
The extra side teeth clean out the cut and grind to the side.

On a lesser note, removing that mass from the wheel will reduce the momentum of the wheel making your engine work harder. Not being an engineer, I can't tell you how significant this is.

We had a 352 which had 4 sets of 3 pockets, each at a different height. In an emergency if we broke teeth and ran out of spares, we would take out the lowest height pockets and use the teeth on the highest pockets.
