Middle pieces in 003 are white oak, top is red oak.
From the cut and size appear to be cut from 12 ft by 4 ft pallet stringers from TN alum smelter pallets for shipping Al sheets. Those pallet stringers are almost all red/white oak mixed with occasional hickory (no hickory seen in the pix)

White will turn and carve much better than the red. Red tends to 'tear out'.

Hope you did not pay much for the red if you intend to turn or carve.

their now shreading chiping all their scrap wood for some project

i once had over 400 boxes of scrap hard woods
