does anyone have a more aerodynamic answer to those (relatively) large brass fixing screws

Yes-sort of. You can carefully file down the head for less obstruction,just leave enough of the screwdriver slot to be able to tighten or loosen the screw,you can still trim it down a lot.
At the same time you can file and thin the throttle shaft too.
