I have an apricot, plum, lemon, and nectrine tree in my back yard, and I don't have any clue on how and when to prune. Can someone help?

You forgot the biggest issue...WHY to prune. Unless there's a good reason to remove something don't. Fruit trees are pruned to help production generally, open up the canopy, etc. But please think "why" before any other question...anybody can cut off a limb, only the tree gods can grow one;)
