using sapwood for a bowl?

The mrs requested matching salt and pepper bowls. they would be about the diameter of a beer coozie and half as tall. I will be using pecan. my idea was to use predominately cream colored sapwood for the salt bowl and the much darker heartwood for the pepper.

I'm new to this so....what am i missing? i've only worked with osage orange and it still amazes me how the colors change on it. is is possible to use pecan sapwood like this? is it possible to preserve the color or will it turn grey on me?
 
I have just recently started using green pecan for turning. So far it's working out pretty good. I turned some canldesticks before Christmas. 8", 12", and 16" tall. They were slinging water everywhere. So far all is good. Been using green Pear and Poplar also. Works pretty good.
