Proper way to prune trees

just bought a place and little to no prunning has been done in years. have a coulpe bing cherry trees that are probaly 40-50 years old and they are way over grown. they are about 30++ feet tall and there is very little in way of branches below 5'. what are the tips, tricks and things i should stay awy from??? also i'm in eugene oregon what time of year should this be done in???
