Why is the MS210 such a poor performer?

I've only run the 210... Surely the MS210 is stronger than an MS180 - it comes with a longer bar, heavier chain after all...

Ah, but the bar length and chain type don't always tell the story that you're reading out of those facts. Heavier chain may well equal more mass/drag, a wider kerf (and thus, more drag), or just a marketing choice. Similarly, HP/displacement figures tell you nothing about how and where the power is made, which makes all the difference in the world.

The "homeowner" end of the spectrum is definitely biased towards a certain kind of machine, with a particular type of powerband and a particular degree of tolerance of neglect. Presumably research has shown that this is the best way to keep occasional users happy and warranty claims to a minimum. Regardless, the only question that really matters is whether the saw is meeting the user's needs and expectations. If yes, then we have nothing else important to talk about, really.

For those who care, here is the ultimate small homeowner saw: a peppy 38cc motor (spinning 15k RPM!!), 13" bar, Oregon 95vp chain

It cuts up "regular sized" firewood quite easily, too
