Living in Texas, I need to know what types of fruit trees do best. They will be planted on the north side of the house. I am hoping to plant dwarf trees an containers.
I live on the opposite side of the country from you, so I can't advise you, other than to say your local nursery will be your best source of information.
I've heard of container gardens, like you envision. One problem is that they need life long staking of trunks and proping of branches. Also manual thinning of the fruit so that only one is left per cluster.
One way to look is Bonai, where you do a lot of bud pinching and periodic root pruning.
