Propane/natural gas is the only logical choice for a on demand DWH.

This year I am going to find out if it is possible (practical?) to heat water with the water jacket on a old cook stove.
 
I have the Rinnai Continuum propane on demand hot water heater and love it. I am quite sure the thing has paid for itself in savings over the last 4 years.
If the electric rates aren't too bad where you are have you considered the on demand electric heaters that are placed right under the cupboards? They are becoming quite popular and the start up costs can be attractive.
