I am pretty new to heating with wood and was wondering if there are any of you that use a Defiant Catalytic (not Encore). If you do have one, what temps do you run the it at? I have heard that people run it anywhere from 400 to 700 degrees at the top back corner and not the griddle temp. Any help would be greatly appreciated.
