What kind of Apple tree should I Grow?

I am interested in growing an Apple tree, and I am looking for advice.
As the years pass, I find myself looking for a simpler, more satisfing life. I started gardening 2 years ago and like the idea of growing what I eat. I'm not too shabby of a cook and baking is my next adventure.
My criteria is as follows:
1. A tree that will bear fruit in one or two years.
2. An apple that well suited for baking such as pie, cobbler etc.
3. My location is in the Midwest, USA..Chicago, Il.
4. A self- pollinating tree.
5. An apple that is good to eat off the tree.
6. And any information any of you kind souls would like to share with me about the care and maintainence of an apple tree.
