I'm not an expert, but I know that if you prune them so that they produce a limited amount of fruit, the trees can dedicate more energy to fewer fruit, you will get better fruit. You'll need to do some research on pruning, but it can be done by non-pros.
 
Here in Orlando, my soil is very sandy and most nutrients leach out of the soil quickly. My lime tree needs fertilizer 2X per year. Also, when we have a dry spell, the fruit is smaller. As long as I make sure it doesn't get too dry, I get Key Limes (typically very small) the size of Lemons!:p
