When the leaves turn and fall off does that mean the sap has left the tree and now sits in the roots? Is there any noticeable benefit to cutting trees in the winter when they are dormant for fire wood?

wood splits easier in the winter
wood is often lighter, therefore one would think "drier"
you can dress for the cold, you cant dress for the heat
saws work better in the winter
those're about the only pros to cutting in the winter time i can come up with
idk that its ready to burn any sooner
plus, it depends on why/how you burn it
fireplace?
furnace?
boiler?

If you are asking about maple the sap will flow anytime that tree thaws enough after a freeze.
Wood splits better with a frost in it.
The brush doesn't weigh as much because of no leaves.
