I suspect that you are referring to a Cherry Laurel-A very nice species. Standard pruning practices are appropriate-remove dead wood, crossed and rubbing branches, cut to lateral branches if a branch tip is over-extended/drooping. Follow the Links that JPS gave you and you should find plenty of instruction. Cherry Laurels regenerate fairly strongly from adventious buds but you shouldn't remove all the "greenery" from a branch-a rule that is generally true for all trees the only exceptions being some specialized pruning practices applicable only to some species.:)
