I don't think it so much the wood itself, but all dirt and crud that gets packed into the bark. A tree that stands in bare dirt, especially sandy soils will be hard on saws for flush cutting. When it rains hard the water will splash soil partilcles up into the crevices in the bark, then it dries out and leaves the soil particles behind adhered to the outside of the bark.

harder wood

i just find the wood harder, i always find oak sawdust ends up pinging fingers like little pin pricks
