How much are they actually twisting? Did you put a moisture meter on different parts of the slab to see if some places are drying faster than others? My first guess is you might have gotten that piece to its 1 3/4 thickness and sanded a bit too early, before the slab dried evenly. Speaking of which... where and how was it dried, and what is the temp and humidity where it is stored now that it is twisting?
 
At the risk of hijacking this thread...

I notice you store your slabs vertically, but do you dry them vertically as well? There's another thread about this going on.

I've never heard of the plaster milk method.
