would any trees from NJ like maples etc be able to live in Georgia

Unfortunately many of your Maples will not tolerate the Southern heat of Georgia. Although many are rated Zone 7 ( Northern Georgia ) bark splitting, and leaf scorch make them unsightly.
Now the good news, you should be able to grow a number of Oaks such as Bur, White, Swamp White, Live,and Shingle Oaks.
Also a new Birch Variety 'Dura-Heat', any ornamental Pear, or Crabapple, or Flowering Cherries also.
