Sycamore tree roots

I have a 25 yr old sycamore and the roots are popping out of the lawn. Can I just cover them with sod or cut them without harming the tree. How often and much should I water the tree as well? Anyone.
 
Root pruning is dangerous but it is done. Best strategy is to mulch between the roots. and maybe plant shallow-rooted groundcover. 2nd best is to add loose topsoil and raise the grade and put your sod up there.
