Trimming maple and fruit trees

Hi, Shea ! Usually you can go to (or visit on line) your state's university extension office for some very straightforward, basic info on pruning trees. Most offices have a master gardener on staff or available for questions, and I've heard they're very helpful. As far as if / when /why to prune, once you have some reference-type info you can better make those decisions. There are a myriad of different reasons to prune. Maybe write it down so you're clear on your objectives and get info specific to them. Do the trees have old storm damage, has it been forever (never) that the trees have been maintained, do you want fruit production, are they in the way of something, etc. etc. ? If you're determined to do the work yourself, again there are some very excellent sources of info, but please be careful out there pruning ! Some of the worst accidents happen from the simplest things... Falling off of ladders, improper cuts on large pieces, wrong tools, et all can lead to disaster.
