I would assume they used a probe and metered the soil?
The "smell" is an additive called mercaptan that is filtered out quite efficiently by soil. More then one house has blown up without any warning odors from both propane and natural gas leaks due to the effect of soil filtering out the odorization chemicals. Most of these leaks are small ones that persist over a long period of time.
