Can anyone tell what kind of tree this is from? The bark is off and I am wanting to use it in my smoker however I would rather not kill my family by using a softwood.
 
Bark and wood looks like butternut or white walnut.
If it smelt like hickory when you cut it then it's 100% id as butternut.

If it had no smell or an odd smell then it might be in the sumac family, i wouldnt smoke it.
Not even sure where you buy papers that big :)

Actually it has it's bark.
Very few things with such thin bark and yellowish wood.

The smell will tell :)

Have a look at the top of the round near the brown wood and you can see the fine bark pretty well, if you look around the top of the round you can see the bark/wood line.
A few blue likens here and there are another giveway the bark is still on.
I think the bark is still on the round and only thing i can think of is butternut with bark like it.

Bet the op has never seen this thin sort of bark before so assumed it was gone.

The tree was standing dead and I cut it down, all the bark was off the tree.

I thought I had read where a hardwood typically has more rings as it grows slower, but again without the bark and no leaf, it seems rather difficult.

If it really has no bark then difficult to id is an understatment.
When i look at the outside of the picture i see bark of what looks like white walnut, but this could be just underbark of something that has fallen off long enough for likens to grow on the outer wood.

As for softwood having thicker growth rings, yes in general but not always.

What was the smell of this piece of wood when you cut it?
 
ELM, it will be pretty stringy. Good for firewood. Not sure what flavors it will add to meat though.
