I really like maple smoke as well. It has a sort of sweet smell with a bit of spice. One of my favorites.

I've been burning a bit of "highly valuable" black walnut. boy does it smell nice. It reminds me of a sweet pipe tobacco. It seasons slowly though, more like oak.

Oak doesn't have that sweet smell. It has sharper, almost mineral quality to it. It reminds me just a bit of the smell of burning coal.

As far as density goes, I find that red oak once it is finally dry is very similar to the hard maple species around me. Where the maple will dry in a year the oak seems to take 2+. I am burning some three year seasoned red oak and I am surprised how light the splits are. They aren't light Compared to lesser woods but lighter than I have come to expect. What I always assumed was density seems to be mostly water.
