Old school wood turners liked to work there wood green, then they bag there project up with the green chips and cross there fingers. It takes a lot of time to dry the wood slow enough to not crack.

I think the best way to make a cookie-table may be to cut the cookie from an already cured log.
 
super fast method for drying wood.

a pretty cool method that i learned online from a woodturner on woodcentral turning forums was an "alcohol soak"
basically you'd rough turn soemthing green,drop it in the denatured alcohol tub for few hours or overnight, then take out and wrap in paperbags/shavings. in a couple weeks it'd be dry and ready to finish turn.. the alc displaces the water in the wood.then evaporates fairly quickly(but controlled by the paper/shavings..)
