The full range of Fuchs Silkolene racing motorcycle oils are sold at the local auto chain store (Super Cheap Auto) - which is surprising given S.C.A usually have only 'economy' lines. The race and off road oils are group V ester-based synthetics - no group III or IV's here!

So which, if any, of these Silkolene products may be 'best' for chain saws?

Racing:
Comp 2 Plus:
Pro 2

Off Road:
Comp 2 Plus SX
Pro 2 SX

I'm not including their castor-based oils (gummy deposits), just the ester-based ones.

I know some guys on here run Motul 800T 'off road' - what's the deal with 'off road' 2T oils as opposed to 'track / race' versions?

Oh, and before anyone mentions it, no we can't get Stihl Ultra here in NZ.

Pro 2 SX is about the best 2 cycle oils you can use, as is Motul 800T off road

The on and off road thing mostly has to do with power valves, injectors and smoke. As long as the oil is made for use in air cooled 2 cycle engines it should be OK to run in a saw, but I recommend using the off road oils in saws.
